Custard Pie

What is more satisfying than pie? I am sure some things are, but at the time I made this nothing was more satisfying.

I came back from church and I felt like brunch should be pie. Since it was just for me, I resorted to my leftover pie crust sitting in the freezer. This low sugar simple dessert will keep you company any time of the day.

ABOUT THE RECIPE 

Since this is quick and easy, I didn’t make custard from scratch. I used ready to make custard powder from Dr Oetker. You can prepare this custard as the instruction shows on the package or you make it like I do. See instructions below.

Topping up this quick and easy custard pie I drizzled it with Tova caramel sauce from Hero.

This recipe is vegan, rather than use milk for the custard as directed on the package, I used water. I always use water when making custard from custard powder. Though putting together of this custard pie was done with ready to eat pie crust, the actual making of the pie crust is easy. Pie crusts can be made with different types of flours, nuts and grains.   • Pastry: Custard Pie

  • Prep Time: 5 mins

  • Cooking and cooling time:  15 mins

  • Total Time: 20mins

INGREDIENTS

Custard

  • Custard

  • 35g custard powder.

  • I cup boiling water

Garnishing

  • Strawberries and blueberries

  • About 20ml Caramel Sauce

GUIDE / INSTRUCTIONS

To make custard

  • Boil 1 cup water

  • Add custard powder to a small bowl.

  • Dissolve custard powder with 1 Tbsp water

  • Slowly add boiling water to custard mixture, stirring the whole time. Custard will go from liquid to thick. Depending on your original custard mixture, you may use only 3/4 of boiling water. Once custard thickens, stop adding water and stir until complete combined.

  • Let cool for about 10 minutes

  • Scope custard into pie crust, level out, add berries and drizzle with caramel sauce.
