Starting 2022 with this quick and easy carrot puffs. This year is a beautiful one. I am choosing to make more quick, easy desserts infused with veggies and fruits.

ABOUT THE RECIPE 

As I would love all my recipes to be, this quick puffs take as little as 5 mins to mix and they are ready to fry. Blend carrots, measure up your ingredient all in one bowl, mix and fry. It’s that easy. Unlike my other puff recipes banana puffs and spinach puffs. This carrot puffs are made with eggs.

Puffs are for snacking and dessert. Also can be served up any time of the day. Perfect for breakfast too as an alternative to scones or muffins.

STARTING GUIDE
  • Pastry: Quick puffs

  • Prep:  5mins

  • Frying Time: 30 mins

  • Total Time: 35 mins

INGREDIENTS
  • 2 Eggs

  • 360 g Flour

  • 200 g carrots

  • 80 g- 100 g sugar

  • 250 ml milk

  • 2 tsp baking powder

  • 1 tsp salt

  • 1 tsp nutmeg

  • Sunflower oil for frying

GUIDE / INSTRUCTIONS
  • Scrap carrots to peel of skin. Blend with milk and set aside

  • Mix all ingredients together in a bowl, turn in carrot mixture

  • Stir to get a somewhat stretchy dough/ batter

  • Using a deep fryer or a frying pan, pour oil into pan and heat at medium for about 7 mins or until it starts to sizzle and brown on all sides

  • Serve warm or at room temp. Dust with some powdered sugar or serve with chocolate dip
