Easy to Make Coconut Truffles
This 4 ingredient easy coconut truffles are a great healthy snack. They are rolled in small sizes which helps your dessert portioning/moderate eating. It’s vegan, sugar and gluten free.


ABOUT THE RECIPE
This is made with just 4 ingredients. The sweetness comes from sugar free condensed coconut milk. I used salted plant based butter for this. If using unsalted add a tiny pinch of salt. Salt enhances the sweetness from coconut flakes.
Toasted coconut for coating helps enhance coconut flavor. The aroma while toasting will engulf your kitchen.

Cooling Time: 3 hours
Extra [toasting and truffle forming]: 10 mins
Total Time: 3 hrs, 33 mins
INGREDIENTS
70g Coconut flakes
170g condensed coconut milk
36g Plant based butter
1 Tbsp brandy
Extra 50g coconut flakes for topping
GUIDE / INSTRUCTIONS
Add condensed coconut milk, butter and coconut to a pan
Simmer on low heat for about 18 minutes, stirring continuously
Transfer into a boil and let come to room temperature. Then chill for at least 3 hours
When completely cool, it will be a little firm and pliable, easy to roll into a ball
Toast extra coconut in pan on low medium heat for about 4 minutes, stir continuously to avoid flakes over browning
Let slightly cool
Bring out truffles from the fridge, scope chilled mixture into palm and roll
Then roll in toasted coconut
