Green Pea Cookie
Green peas are delicious and a perfect addition to baked goods. Its unique flavor pairs beautifully with sweet pastries. This green pea cookies can be snacked on, used to entertain guests and specially used for seasonal celebrations like Christmas.

There is something beautiful about a blend of 2 colors, the end result gives a green and somewhat shortbread natural cookie color. This recipe is same as making a shortbread cookie, with the addition of green peas. It’s super easy using just 5 ingredients.

INGREDIENTS
200g flour
40g rice flour
50g powdered sugar
125g plant based butter
100g green peas
GUIDE / INSTRUCTIONS
Using a food processor pulse green peas to a coarse texture.
Beat butter and sugar together.
Add flour, rice flour and peas.
Mix to a smooth paste. Roll out flat, wrap in cling film and let rest in fridge for 30 mins.
Bring out of fridge and out in rounds. Dab the back of a fork in flour and press on round to create indentations.
Bake for 20- 25 minutes at 160″C.
Let cool and serve.
Bake at 180″ for 20 mins.
NOTES
Storage: Store in an air tight container for up to 6-8 days.
