Mango Pancakes

This is one pancake I didn’t plan on making and had no recipe for but it turned out to be delicious. I was asked by my first son, mummy, may you make pancakes? My response was no since I had other plans. But then I saw mango in my fruit corner and thought why not make mango pancakes. 

For some reason, which I do not know, these pancakes helped me exercise some level of self control in the kitchen. I am proud to say, I didn’t taste any, not even one while making them. When I make pancakes, I eat up the first 2, 3, 4 pancakes before making the rest. If you do this too, you understand my joy in being able to make this new recipe without trying out any. 

Not tasting it also meant I had no idea what it was like or if I needed to adjust anything. I am grateful for the end result. I knew I hit a jackpot when my little son said it tastes like cake. And I hit another jackpot when my husband said, they were so flavorful, he needed no spreads or syrup to eat them. JACKPOT!!!

ABOUT THE RECIPE 

These mango pancakes are bursting with flavor. The mango paired with yogurt brings in this sweet and somewhat tangy flavor. Addition of salt draws out the sweetness from the mango.

A dash of vanilla and orange extracts wraps it up in exotic goodness.

STARTING GUIDE
  • Pastry: Quick bread- pancakes

  • Prep Time: 10 mins

  • Cooking time: 40 mins

  • Total Time: 50 mins

INGREDIENTS
  • 200g peeled and diced mangoes

  • 380g flour

  • 250g yogurt

  • 4 eggs

  • 1tsp salt

  • 80g – 100 g sugar.

  • 40g melted butter

  • Vanilla flavor

  • Orange flavor

GUIDE / INSTRUCTIONS
  • Blend together peeled mango and yogurt.

  • Mix all dry ingredients together in a bowl.

  • Transfer dry ingredients into yogurt mixture, add eggs, vanilla and orange flavor

  • Melt butter and add to batter, mix all together. 

  • Grease pan, and make pancakes one by one.

NOTES

Tip: If your cooking top would allow, use 2 or 3 pancake or frying pans at the same time to be quick.
