Growing up I so much loved chocolates, but since I was about 23 years old my love for chocolate candies died a natural death. I could eat a bar of chocolate for 6 months. 

I got this new biscoff chocolate bar for work. Now stuck with it and only able to have a bite of one square. It was lovely though, really nice. Soft biscoff paste enclosed in sweet dark chocolate. 

I could choose to have this chocolate stay months in my fridge, or to put it to good use. I chose the latter:- Chickpea biscoff cookie bar.

STARTING GUIDE
  • Spread: Chickpea Biscoff Magic Cookie

  • Prep Time: 20 mins

  • Cooking Time: 45 – 50  mins

  • Total Time: 70 mins

INGREDIENTS
    • 220g Chickpea (Drained but not completely dry)
    • 50g chocolate chips
    • 90g – 150g lotus biscoff (based on your preference for lutos biscoff)
    • 77 g flour
    • 1 Tbs Coconut oil (optional)
    • 80 g lotus biscoff dark chocolate bar
    • Pinch of salt
GUIDE / INSTRUCTIONS
    •  Blend chickpea until fully smooth 
    •  Add coconut oil ( if using)
    •  Add flour and a pinch of salt
    • Add about 40g of biscoff 
    • Combine to form a dough 
    • Add chocolate chips and mix
    • Line a 15cm square pan with baking paper 
    • Divide dough on two part, roll one part and press down in pan. Spread the rest biscoff on to dough
    • Place the remaining dough over biscoff layer
    • Now place biscoff chocolate over dough
    • Bake at 150⁰ for 45 – 50 mins
    • Let cool and cut in squares
STORAGE

Store in an air thigh container, keep in fridge for 5 days.
