This might be the easiest thing I have had to whip up. It’s easy but serves many purposes. Only after making it, did I realize it’s multi purpose use.
My local tropical store had mangoes at a give a way price, sold in a box of 12. They were about 10% of the normal cost of mangoes in the Netherlands, I didn’t think twice about picking up a box. The only mistake I made was not taking more boxes.
With 12 mangoes in hand, the next question is what do we make with them. The first is this “easy to make mango spread”.


ABOUT THE RECIPE
I wanted it simple and somewhat plain – just mangoes. It has only 3 ingredients, of which if you do not need the added brandy, you can use only the first two ingredients.

To make these, get some mangoes, sugar and brandy and you have the most smooth, delicious mango spread you have ever tasted. Next time you desire some mango spread, don’t buy, just make yours.
Mango spread can be used on breads, crackers, pancakes, on cakes or as cake fillings. Also a great addition to ice creams. Did I mention you can eat it as a dessert? Scoop some into a dessert bowl and enjoy.

Spread: Mango Spread
Prep Time: 5 mins
Cooking Time: 20 mins
Total Time: 25 mins
INGREDIENTS
600 g Mangoes
50 g – 80 g Sugar (I used 50 g, as I prefer it less sugary)
45 ml Brandy
GUIDE / INSTRUCTIONS
Wash and peel mangoes. Dice them up
Add to pan together with sugar
Simmer over medium heat for about 12 – 15 mins (Or until mangoes are really soft). Keep an eye on it by stirring occasionally to avoid burning. The natural waters from the mangoes would have almost dried up
Now add your brandy and simmer again for 5 minutes.
Using a hand mixer (Stafmix) blend mango directly in the pot until completely smooth. If you don’t have a hand mixer, use a blender, but first allow it to cool down for 5 mins and blend smoothly
Transfer into a sealed jar. If you have empty jam glass bottles at home, just re-purpose them


STORAGE
Because of the brandy in this, it will store in the fridge for up to one month. To keep for longer. Store in the freezer for up to 3 months. To use, let completely thaw at room temperature before use.
