“You are weird mummy”, is a common saying in my home. My boys say this to me when I whip up a new veggie and fruit fusion. This time I remixed my favorite quick banana puffs with the addition of spinach. It’s the same recipe, quick and easy, the only other addition is spinach. See original banana puff recipe here

I chose to chop spinach rather than blend. I envisioned these puff to be white and green, blending spinach would have given only a green color. Although nice, but not what I was going for. 

STARTING GUIDE
  • Pastry: Banana Spinach Puffs

  • Prep Time: 12 mins

  • Frying time: 25 min

  • Total Time: 37 mins

INGREDIENTS
  • 2 bananas

  • 360 g Flour

  • 80g sugar

  • 250 ml almond milk

  • 60 g Spinach

  • 2 tsp baking powder

  • 1 1/2 tsp salt

  • 1 tsp nutmeg

  • Sunflower oil for frying

GUIDE / INSTRUCTIONS
  • Mash bananas with a fork, set aside

  • Chop spinach, set aside

  • Mix all ingredients together in a bowl

  • Using a deep fryer or a frying pan, pour oil into pan and heat at medium for about 7 mins or until it starts to sizzle

  • Scope into hot oil and fry until brown on all sides
