Cornmeal Pineapple Waffle (Gluten and Sugar Free)

ABOUT THE RECIPE 

I wanted some waffles but really did not want the heaviness from flour. For lack of oat flour at the moment, I grabbed corn meal. I also wasn’t in the mood for sugar, thus the pineapple and sweetcorn supplied the sweetness this waffle needed.

Like other waffle recipes, this one isn’t rocket science. It’s quick and easy to prepare. This waffles are crispy on the outside and tender on the inside.

You will need a blender or a food processor. If using a blender, you may choose to fully blend pineapple and sweetcorn or pulse to retain small chunks of pineapples and sweetcorn.  With a food processor, you don’t have to worry about finely blending.

No flavoring was used. The flavor from fresh pineapples sips through the waffles and the sweetness is enhanced with the addition of salt to the recipe.

INGREDIENTS
  • 150g Cornmeal

  • 145g Canned sweetcorn (drain water)

  • 145g Pineapples

  • 50g Melted vegan butter

  • 1 Egg (60g)

  • 120ml Almond Milk

  • 1/2 tsp Salt

  • 1 tsp baking powder

GUIDE / INSTRUCTIONS
  • Melt butter and set aside.

  • Combine all dry ingredient together. Using a whisk, mix and stir a couple of times to incorporate air.

  • In a food processor, blend pineapples and sweetcorn together until mixed to a  semi fine texture.

  • Add egg, almond milk and melted butter. Add in dry ingredients. Pulse a few times to combine all scraping down side to ensure all dry ingredients are well combined.

  • Preheat waffle pan for 5 minutes. Pour batter into pan and cook for 4- 5. Do not over cook as not to dry out waffles.

NOTES

Can be eaten as a side or starch in savory meals or eaten as a quick bread with syrup and fruits.

Waffles are still fresh at room temperature on the second day and can be stored in the freezer for 1 month. Thaw at room temperature when take out of freezer.
